Orval French Onion Soup

To change it from French Onion Soup into Orval Onion Soup use a Belgian Pale Ale (like Orval) in place of the dry sherry.  When I made this recipe for a beer party last December I couldn’t bring myself to use a $6 bottle of beer in a soup, so I substituted Ommegang’s Rare Vos for the Orval.  This is a great recipe to pair with Belgian Ale’s, like Orval or Tripel Karmeliet.  I’ve added beer reviews (in the beer review section) on both of those heavenly beers to complete this food-beer pairing.
