Just tried this recipe tonight with minor alterations in that I instead added 2.5 tsp of maple syrup and 1 cup of chia seeds. B/c the chia seeds are not as sweet as dried fruit, i.e. raisins or cherries, about another tsp of syrup was needed. In the end, the results yield a tasty oatmeal cookie with a hint of stout complexity. Btw, I used Founder’s Breakfast Stout so some of the coffee notes definitely came through in the back end.
Sounds tasty. I especially like the substitution of Founders Breakfast Stout.
