Tom Ayers, head brewer and co-owner of Ill Mannered Brewing, joins us on the podcast this month for a wide ranging discussion on the challenges and opportunities of running a neighborhood brewery. Ill Mannered opened in August 2015, starting in a tiny 1000 square foot space in a strip mall while all four owners did their best to build the brewery while keeping their day jobs. Last year (2018) they moved across the parking lot to a purpose built space that quadrupled their size, and soon three of the four owners will be working full time at the brewery. Tom, Mark and I discuss topics ranging from yeast management, selling Belgian beer styles to craft beer newbies, Australian Sparkling Ales, Ohio-grown malts and hops, and much more.
