After an extended hiatus, the All Things Beer Podcast is back with an episode about two idiosyncratic German styles – Berliner Weisse and Gose. We are joined by Ryan Torres, Brewmaster at Brew Brothers and longtime lover of sour beers. Although they originated in different parts of Germany, these two sessionable, sour wheat beers have a lot in common. We track down some commercial examples, including a barrel-aged Berliner Weisse from Purpose Brewing in Fort Collins, CO and a tasty, margarita-inspired gose from Brew Brothers. With Ryan’s help we go deep on various aspects of brewing these beers including various sources of lactobacillus (lab culture, probiotic, yoghurt, sour mash), the role of brettanomyces in these styles, fruit additions, dry hopping, and much more.
